Make a delicious and healthy Hyderabadi Dessert in minutes with Kaddu (Bottle Gourd). This easy Kaddu ki Kheer.

INGREDIENTS:

  • Milk 1 liter

  • Kaddu (Bottle Gourd) 1 Medium (grated)

  • Khoa 50 gm

  • Cashew nuts (kaju) 1 Cup (handful) grind to paste

  • Basmati Rice 1 Cup (handful) (soak in water for 30 mins)

  • Elaichi (Cardamom) powder pinch

  • Saabudana (Sago) 3 tbspns (soaked for 20 mins)

  • Sugar to taste

  • Green Food Color 2-3 drops

  • Pineapple essence 1 tsp

  • Saffron (zafran) few strands

  • Almonds cut finely for garnishing(soak them a day before)

  • METHOD:

  • Boil grated Kaddu in water or Milk to almost done.

  • Dry Basmati Rice on a soft cotton cloth then grind it to granules and keep aside.

  • Boil Milk and add Cashew nut paste,Basmati Rice, Saabudana (Sago)

  • Keep stirring every now and then.

  • Add Elaichi(Cardamom) powder,few saffron strands.

  • When the Rice is almost done add cooked Kaddu to it and cook till desired consistency (it should be thick).

  • Finally add Sugar,Khoa,Pineapple essence,Green food color to it.

  • Garnish with Almonds and serve chilled .
